This Cuban Bacon Egg Sandwich is a great way to start your day. Couple it with some Cafe con Leche and you will be in heaven!

  • 4 Eggs, scrambled
  • Milk, couple splashes mixed with eggs
  • Salt & Pepper, to taste
  • 4 slices of Bacon
  • Cuban Bread, cut into (2) 6-8 inch pieces
  • Butter
Mise en place
  1. Scramble eggs, add milk, salt, pepper and mix well.
  2. Cook scrambled eggs and set aside.
  3. Cook bacon and set aside on paper towels.
Assemble the sandwich
  1. Cut Cuban bread and lay flat.
  2. Layer eggs evenly on 2 halves.
  3. Top with 2 pieces of bacon for each sandwich.
  4. Place a piece of bread on top of each sandwich.
  1. Lightly butter both top and bottom of sandwich. Heat sandwich in press until crisp.
  2. Cut diagonally from corner to corner.
  3. Serve.
