Pollo e Formaggio (Chicken Spinach Tomato Artichoke and Cheese Pizza) is by far one of my favorite pizzas of all time. This recipe will make (2) 10 inch personal pizzas that you can share with your favorite people.
Ingredients
Pizza dough
Pizza toppings
  • 2 cups of Grilled Chicken, cubed
  • 8 - 10 small Artichoke Hearts, sliced in halves
  • ¼ cup Tomato, diced into small pieces
  • 4 - 5 oz Fresh Baby Spinach, cleaned & thick stems cut
  • 16 oz Fontina Cheese, shredded
  • 2 tbs Parmesan Cheese, grated
  • 3 tbs Olive Oil
  • Several dashes Alessi Dipping Spices
Instructions
Mise en place
  1. Cut chicken, artichoke hearts, tomatoes and set aside in different bowls.
  2. Clean and dry spinach, cut stems if necessary.
  3. Shred Fontina cheese if necessary and set aside.
  4. In a small bowl, mix 3 tbs olive oil with herb seasonings and set aside.
Pizza dough prep
  1. Remove dough from refrigerator and let stand one hour (do not remove from bag until stand time completed).
Assemble & bake pizza
  1. Preheat oven to 400°F.
  2. Prepare crust... Flour hands lightly and pat dough lightly with flour. Cut dough in half with sharp knife, place one half on lightly floured surface and roll to desired thickness.
  3. Place dough on on a lightly floured pizza peel or lightly greased nonstick 16" pizza pan.
  4. Brush dough lightly with olive oil & herb mixture.
  5. Place spinach, chicken, Fontina, artichokes, tomatoes and Parmesan spread out evenly on dough.
  6. Sprinkle salt & pepper over pizza and lightly brush outside crust with olive oil & herb mixture.
  7. If on a pizza peel, place pizza carefully on pizza stone or if on nonstick 16" pizza pan, simply place pizza in oven on middle rack.
  8. Bake 18–25 minutes (depending on thickness) or until crust is golden, cheese is melted and thoroughly heated.
  9. Let stand 5 minutes.
  10. Repeat process for second pizza.
Notes
Don't have Alessi Dipping Spices... Substitute with several dashes of the following: Basil, Oregano, Garlic Salt, Crushed Red Pepper
