Plátanos Maduros Fritos (Fried Sweet Plantains) are a very popular side dish in Cuban cuisine. Wait till plantain's skin is dark yellow or black to ensure they will be as sweet as possible. The darker they get, the sweeter they will be when fried.
Ingredients
  • 1 ripe Plantain (Plátano), with dark yellow or black skin
  • Canola or Vegetable Cooking Oil (enough to cover half the thickness of plantains in the pan)
  • Salt
Instructions
Mise en place
  1. Cut the ends off of the ripe plantain.
  2. Slice along the length of the skin, then carefully peel back the skin exposing the entire plátano.
  3. Slice the plantain into diagonal pieces about ½ - ¾ inch thick.
Fry plátanos
  1. Add oil to a frying pan until it is ¼ inch deep and heat over medium heat .
  2. When oil is hot, add the plantain slices and fry until the bottoms are golden brown.
  3. Turn the slices over and continue to fry them until both sides are golden.
  4. Remove the fried plantains and place them on paper towels to soak up excess oil
  5. Sprinkle a very small amount of salt over fried plantains to enhance the sweetness.
  6. Serve hot with your favorite entree dishes.
Notes
Have more guests? Usually one Plátano will serve 2-3 people.
